Ingredients

2 chicken breasts

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon cumin

1/2 teaspoon chili powder

Salt and pepper, to taste

1/4 cup chipotle ranch dressing (store-bought or homemade)

1 cup cooked rice

1/2 cup black beans, drained and rinsed

1/2 cup corn kernels (fresh, frozen, or canned)

1/2 cup shredded cheese (cheddar or Mexican blend)

1/4 cup fresh cilantro, chopped

4 large flour tortillas


Instructions

  1. Preheat your grill or grill pan to medium-high heat.
  2. Season the chicken breasts with olive oil, garlic powder, onion powder, paprika, cumin, chili powder, salt, and pepper.
  3. Grill the chicken breasts for about 5-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C). Remove from heat and let the chicken rest for a few minutes before slicing it thinly.
  4. In a large bowl, combine the cooked rice, black beans, corn, shredded cheese, and chopped cilantro.
  5. Lay out the tortillas and spoon an even amount of the rice mixture onto the center of each one.
  6. Top with the sliced grilled chicken and drizzle with chipotle ranch dressing.
  7. Fold in the sides of the tortillas and roll them up tightly to form burritos.
  8. Serve immediately and enjoy!
