Ingredients
2 chicken breasts
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon cumin
1/2 teaspoon chili powder
Salt and pepper, to taste
1/4 cup chipotle ranch dressing (store-bought or homemade)
1 cup cooked rice
1/2 cup black beans, drained and rinsed
1/2 cup corn kernels (fresh, frozen, or canned)
1/2 cup shredded cheese (cheddar or Mexican blend)
1/4 cup fresh cilantro, chopped
4 large flour tortillas
Instructions
- Preheat your grill or grill pan to medium-high heat.
- Season the chicken breasts with olive oil, garlic powder, onion powder, paprika, cumin, chili powder, salt, and pepper.
- Grill the chicken breasts for about 5-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C). Remove from heat and let the chicken rest for a few minutes before slicing it thinly.
- In a large bowl, combine the cooked rice, black beans, corn, shredded cheese, and chopped cilantro.
- Lay out the tortillas and spoon an even amount of the rice mixture onto the center of each one.
- Top with the sliced grilled chicken and drizzle with chipotle ranch dressing.
- Fold in the sides of the tortillas and roll them up tightly to form burritos.
