Description

Soft and chewy spiced pumpkin cookies with a surprise chocolate center, perfect for fall and holiday baking.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup canned pumpkin puree
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/2 cup mini chocolate chips
  • About 24 chocolate baking melts or chocolate chunks

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Mix in the pumpkin puree, egg, and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
  5. Gradually add the dry ingredients to the wet ingredients and stir until just combined.
  6. Fold in the mini chocolate chips.
  7. Use a cookie scoop or tablespoon to scoop dough, flatten slightly, and place a chocolate melt in the center. Wrap the dough around the chocolate and roll into a ball.
  8. Place the dough balls on the prepared baking sheet about 2 inches apart.
  9. Bake for 10–12 minutes or until the edges are set and the tops look slightly underdone.
  10. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • For best results, do not overbake; cookies will continue to cook slightly while cooling.
  • You can substitute the chocolate center with caramel or nut butter for variation.
  • Store cookies in an airtight container at room temperature for up to 5 days.
