Description

These no-bake Chocolate Coconut Chia Seed Bars are easy to make, packed with wholesome ingredients like oats, chia seeds, and coconut, and make a perfect healthy snack or dessert.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup ground flaxseed
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup chia seeds
  • 1/4 cup cocoa powder
  • 1/4 tsp salt
  • 1/2 cup almond butter
  • 1/2 cup maple syrup
  • 1/2 tsp vanilla extract
  • 1/3 cup dairy-free chocolate chips

Instructions

  1. Line a 8×8-inch pan with parchment paper.
  2. In a large mixing bowl, combine the oats, flaxseed, shredded coconut, chia seeds, cocoa powder, and salt.
  3. In a small saucepan over low heat, warm the almond butter, maple syrup, and vanilla extract until smooth and combined.
  4. Pour the wet mixture into the dry ingredients and stir well until fully incorporated.
  5. Fold in the chocolate chips.
  6. Transfer the mixture to the prepared pan and press down firmly into an even layer.
  7. Place in the fridge or freezer until firm, about 30–60 minutes.
  8. Once set, slice into bars and enjoy.

Notes

  • Store bars in the fridge for up to 2 weeks or freeze for up to 3 months.
  • Use any nut or seed butter in place of almond butter.
