Description

Chocolate Coconut Energy Balls are a quick, no-bake snack made with wholesome ingredients like dates, coconut, cocoa, and nuts. Naturally sweetened and nutrient-rich, they’re perfect as a pre-workout boost, afternoon snack, or healthy dessert.


Ingredients

  • 1 cup Medjool dates, pitted
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup cocoa powder
  • 1/2 cup rolled oats
  • 1/2 cup almonds or cashews
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 tsp coconut oil (optional)
  • Extra shredded coconut for rolling (optional)

Instructions

  1. Add the pitted dates to a food processor and blend until they form a sticky paste.
  2. Add shredded coconut, cocoa powder, oats, nuts, vanilla extract, and salt to the food processor. Blend until the mixture is finely ground and begins to clump.
  3. If the mixture is too dry, add a teaspoon of coconut oil and blend again until the consistency improves.
  4. Scoop out portions and roll into small balls using your hands.
  5. Roll each ball in extra shredded coconut if desired.
  6. Place the energy balls in an airtight container and refrigerate for at least 30 minutes to firm up.

Notes

  • Use Medjool dates for the best texture and natural sweetness.
  • Add chia seeds, flaxseed, or hemp hearts for extra nutrition.
  • Store in the fridge for up to 1 week or freeze for up to 3 months.
  • To make nut-free, substitute nuts with sunflower or pumpkin seeds.
