Ingredients
- 1 lb strawberries
- 8 oz light cream cheese, softened
- 1/4 cup plain non-fat Greek yogurt
- 2 tbsp honey
- 1 tsp vanilla extract
- 1/2 cup dark chocolate chips
- 1 tsp coconut oil
Instructions
- Wash strawberries and pat dry. Cut off the tops and hollow out the centers with a paring knife.
- In a bowl, mix cream cheese, Greek yogurt, honey, and vanilla until smooth.
- Transfer the cheesecake filling into a piping bag or zip-top bag with the corner snipped off.
- Pipe the filling into each hollowed strawberry.
- Melt dark chocolate chips and coconut oil together in the microwave or over a double boiler until smooth.
- Dip the top of each filled strawberry into the melted chocolate.
- Place dipped strawberries on a parchment-lined tray and refrigerate until the chocolate is set.
Notes
- Use ripe but firm strawberries for best results.
- You can substitute maple syrup for honey if preferred.
- Store leftovers in the refrigerator for up to 2 days.
