Ingredients

  • 1 lb strawberries
  • 8 oz light cream cheese, softened
  • 1/4 cup plain non-fat Greek yogurt
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 1/2 cup dark chocolate chips
  • 1 tsp coconut oil

Instructions

  1. Wash strawberries and pat dry. Cut off the tops and hollow out the centers with a paring knife.
  2. In a bowl, mix cream cheese, Greek yogurt, honey, and vanilla until smooth.
  3. Transfer the cheesecake filling into a piping bag or zip-top bag with the corner snipped off.
  4. Pipe the filling into each hollowed strawberry.
  5. Melt dark chocolate chips and coconut oil together in the microwave or over a double boiler until smooth.
  6. Dip the top of each filled strawberry into the melted chocolate.
  7. Place dipped strawberries on a parchment-lined tray and refrigerate until the chocolate is set.
