Description

Decadent chocolate covered strawberry brownies made with a rich, fudgy brownie base, a layer of sweet strawberry frosting, and topped with smooth chocolate ganache. A perfect treat for Valentine’s Day or any special occasion.


Ingredients

  • 1/2 cup (113 g) unsalted butter, melted
  • 1 cup (200 g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup (30 g) unsweetened cocoa powder
  • 1/2 cup (63 g) all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 cup (57 g) unsalted butter, softened (for frosting)
  • 1 cup (125 g) powdered sugar (for frosting)
  • 1 tablespoon milk (for frosting)
  • 1/2 teaspoon vanilla extract (for frosting)
  • 2 tablespoons freeze-dried strawberry powder (for frosting)
  • 1/2 cup (85 g) semi-sweet chocolate chips (for ganache)
  • 1/4 cup (60 ml) heavy cream (for ganache)

Instructions

  1. Preheat oven to 350°F (177°C). Line an 8×8 inch baking pan with parchment paper and set aside.
  2. In a medium bowl, combine melted butter and granulated sugar. Add eggs and vanilla extract, whisk until smooth.
  3. Sift in cocoa powder, flour, salt, and baking powder. Stir until just combined.
  4. Pour batter into prepared pan and spread evenly. Bake for 22–25 minutes or until a toothpick inserted comes out with a few moist crumbs. Cool completely.
  5. For the frosting, beat softened butter until creamy. Add powdered sugar, milk, vanilla, and freeze-dried strawberry powder. Beat until smooth and spreadable.
  6. Spread strawberry frosting evenly over cooled brownies and place in the refrigerator to chill.
  7. For the ganache, heat heavy cream in a small saucepan until just simmering. Pour over chocolate chips in a heatproof bowl. Let sit for 3 minutes, then stir until smooth.
  8. Pour ganache over the chilled frosted brownies and spread evenly. Chill until ganache is set, about 30 minutes.
  9. Slice into squares and serve.
