Ingredients
- 1/2 cup unsalted butter, at room temperature
- 1 cup packed light brown sugar
- 1 large egg, at room temperature
- 2 teaspoons vanilla extract
- 1 1/4 cups all-purpose flour
- 1/3 cup Dutch-processed cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup freeze-dried strawberries
- 1 cup semisweet chocolate chips
- For the chocolate coating:
- 1 cup semisweet chocolate chips
- 1 teaspoon coconut oil
Instructions

Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.

In a large bowl or stand mixer, beat butter and brown sugar until light and fluffy.

Add egg and vanilla extract; mix until combined.

Stir in flour, cocoa powder, baking soda, baking powder, and salt until just combined.

Fold in freeze-dried strawberries and semisweet chocolate chips.

Scoop 3 tablespoons of dough per cookie onto baking sheets, spacing 2 inches apart.

Bake for 10–12 minutes, until edges are set and centers are soft.

Let cookies cool on baking sheets for 15 minutes.

Melt chocolate chips with coconut oil in the microwave in 30-second intervals, stirring until smooth.
