Description

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter (for filling)
  • 2 cups powdered sugar
  • 1/2 teaspoon peppermint extract
  • Green food coloring (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the eggs and vanilla extract, beating until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until a soft dough forms.
  6. Scoop the dough into small balls and place them on the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 8–10 minutes, or until the cookies are set but still soft in the center. Allow them to cool completely on a wire rack.
  8. For the filling, beat the butter until creamy. Gradually add the powdered sugar, mixing until smooth.
  9. Mix in the peppermint extract and green food coloring, if using.
  10. Spread or pipe the mint filling onto the flat side of half of the cookies, then top with the remaining cookies to form sandwiches.
