Ingredients
- 1 1/4 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup unsalted butter (for filling)
- 2 cups powdered sugar
- 1/2 teaspoon peppermint extract
- Green food coloring (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- In a large bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs and vanilla extract, beating until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing just until a soft dough forms.
- Scoop the dough into small balls and place them on the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 8–10 minutes, or until the cookies are set but still soft in the center. Allow them to cool completely on a wire rack.
- For the filling, beat the butter until creamy. Gradually add the powdered sugar, mixing until smooth.
- Mix in the peppermint extract and green food coloring, if using.
- Spread or pipe the mint filling onto the flat side of half of the cookies, then top with the remaining cookies to form sandwiches.
