Description

These chocolate protein balls are rich, chewy, and coated in a crispy chocolate shell for the perfect snack or dessert. Packed with protein and wholesome ingredients, they are easy to make and great for meal prep.


Ingredients

  • 1/2 cup cashew butter
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup chocolate protein powder
  • 2 tablespoons cocoa powder
  • 1/4 cup oat flour
  • 1/4 cup ground flax seed
  • Pinch of salt (about 1/8 teaspoon)
  • 1 cup dark chocolate chips
  • 1 teaspoon coconut oil
  • 1/2 cup crispy rice cereal

Instructions

  1. In a large mixing bowl, whisk together the cashew butter, maple syrup, and vanilla extract until smooth.
  2. Add the chocolate protein powder, cocoa powder, oat flour, ground flax seed, and salt. Stir until fully combined. Use your hands if needed to help the mixture come together evenly.
  3. Divide the mixture into 13 evenly sized balls and place them in the freezer for about 5 minutes to firm up slightly.
  4. Meanwhile, combine the dark chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until fully melted and smooth, about 1 minute 30 seconds total.
  5. Stir the crispy rice cereal into the melted chocolate mixture.
  6. Coat each protein ball in the chocolate cereal mixture using a spoon for easy handling.
  7. Place the coated protein balls in the refrigerator until set.
  8. Store in an airtight container in the refrigerator until ready to enjoy.
