Description

These Green Smoothie Chocolate Muffins are a healthy, veggie-packed treat with spinach and banana, naturally sweetened with maple syrup. They’re soft, chocolatey, and perfect for a nutritious breakfast or snack.


Ingredients

  • 1 cup mashed banana (about 2 medium bananas)
  • 1 1/2 cups packed fresh spinach
  • 1/2 cup maple syrup
  • 1/2 cup plain Greek yogurt
  • 1/4 cup milk of choice
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (plus more for topping if desired)

Instructions

  1. Preheat oven to 350°F and line a muffin tin with liners or spray with cooking spray.
  2. Add banana, spinach, maple syrup, Greek yogurt, milk, eggs, and vanilla to a blender. Blend until completely smooth.
  3. In a large bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  4. Pour the wet mixture from the blender into the dry ingredients and stir until just combined.
  5. Fold in the chocolate chips.
  6. Divide the batter evenly into the prepared muffin tin.
  7. Top with extra chocolate chips if desired.
  8. Bake for 18–22 minutes or until a toothpick inserted comes out clean.
  9. Cool in the pan for 5–10 minutes before transferring to a wire rack to cool completely.

  • You can use any milk of choice (dairy or non-dairy).
