Ingredients

  • 2 cups chocolate cookie crumbs or graham cracker crumbs

  • 1 cup granulated sugar
  • 1/2 cup sour cream
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 8 oz semi-sweet chocolate, melted and slightly cooled
  • 1 1/2 cups fresh or frozen strawberries
  • 2 tablespoons granulated sugar (for strawberry swirl)
  • 1 teaspoon cornstarch (optional, for thickening)

Instructions

  1. Preheat oven to 325°F (163°C). Lightly grease a 9-inch springform pan and wrap the bottom with foil if using a water bath.
  2. In a bowl, combine cookie crumbs, sugar, and melted butter. Press firmly into the bottom of the pan. Bake for 8–10 minutes and let cool.
  3. In a saucepan over medium heat, cook strawberries with sugar until softened. Blend into a smooth puree. Return to heat and simmer until slightly thickened. Stir in cornstarch slurry if needed. Cool completely.
  4. In a large bowl, beat softened cream cheese until smooth. Add sugar and mix until creamy.
  5. Blend in sour cream and vanilla extract.
  6. Add eggs one at a time, mixing gently after each addition.
  7. Stir in melted chocolate until fully incorporated.
  8. Pour batter over cooled crust. Drop spoonfuls of strawberry puree on top and swirl gently with a knife to create a marbled pattern.
  9. Bake for 55–65 minutes until edges are set and center slightly jiggles.
  10. Turn off oven, crack the door, and let cheesecake cool inside for 1 hour.
  11. Refrigerate for at least 6 hours or overnight before slicing and serving.
