Ingredients

  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup milk
  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 2 teaspoons ground cinnamon
  • 3 ½ cups powdered sugar
  • 1 teaspoon vanilla extract
  • Cinnamon sugar (for sprinkling, optional)
  • Mini churros (for garnish, optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a medium bowl, whisk together the flour, cinnamon, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, and mix until just combined.
  6. Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
  7. Bake for 18–20 minutes, or until a toothpick inserted in the center comes out clean. Allow cupcakes to cool completely before frosting.
  8. For the frosting, beat the cream cheese and butter together until smooth.
  9. Add the cinnamon, powdered sugar, and vanilla extract, and beat until light and fluffy.
  10. Frost the cooled cupcakes generously and, if desired, sprinkle with cinnamon sugar and top with mini churros.
