Description
Soft and lightly sweet cinnamon raisin bagels made with simple ingredients and a hint of orange zest. Perfect for a quick homemade breakfast or snack.
Ingredients
- 1 3/4 cups self-rising flour (plus extra for dusting)
- 1 cup dairy-free Greek yogurt
- 1 1/2 teaspoons cinnamon
- 1/2 cup dried raisins (soaked and drained)
- 1 tablespoon coconut sugar
- 1 teaspoon vanilla extract
- 1–2 teaspoons grated orange zest
Instructions
- Place the dried raisins in a bowl and cover with hot water. Add optional orange zest and let soak for 10 minutes, then drain.
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly oil it.
- In a large bowl, combine flour, yogurt, cinnamon, raisins, sugar, vanilla, and orange zest.
- Mix with a spatula, then knead with oiled hands until a soft dough forms. Add more flour if sticky.
- Divide the dough into 4 portions and shape into bagels by forming a hole in the center.
- Place bagels on the baking sheet, spacing them apart. Optionally insert foil or a nozzle in the center to maintain the hole shape.
- Brush tops with yogurt or plant-based milk.
- Bake for 18-20 minutes until golden brown.
- Cool on the baking sheet for 15 minutes, then transfer to a rack to cool completely.
Notes
- You can substitute coconut sugar with brown sugar or maple sugar.
- If dough is too sticky, add flour gradually until manageable.
- Orange zest adds brightness but can be omitted.
- Store leftovers in an airtight container for up to 2 days or freeze for longer storage.
