Description
This homemade Cinnamon Rock Candy is a festive and spicy treat that’s perfect for holidays or gifting. With a bold cinnamon flavor and a beautiful red color, it’s as eye-catching as it is delicious.
Ingredients
- 3 3/4 cups granulated sugar
- 1 1/4 cups light corn syrup
- 1 cup water
- 1 tsp cinnamon oil
- 1/2 tsp red food coloring (liquid or gel)
- Powdered sugar, for dusting
Instructions
- Line a 15x10x1 inch baking sheet with foil and lightly grease it. Set aside.
- In a large heavy saucepan, combine the sugar, corn syrup, and water. Stir over medium heat until sugar dissolves.
- Attach a candy thermometer to the pan (make sure it doesn’t touch the bottom). Bring the mixture to a boil without stirring and continue cooking until it reaches 300°F (hard crack stage).
- Remove from heat and wait for the bubbling to stop. Carefully stir in the cinnamon oil and red food coloring. Be cautious as the mixture will release strong vapors.
- Immediately pour the candy mixture into the prepared pan and allow it to cool completely (about 1 hour).
- Once hardened, break the candy into pieces using a butter knife or mallet.
- Dust the candy pieces with powdered sugar to prevent sticking. Store in an airtight container.
Notes
- Use a candy thermometer for accurate temperature measurement.
- Cinnamon oil is much stronger than extract – do not substitute without adjusting quantity.
- Be cautious when adding cinnamon oil – the vapors can be intense.
- You can omit the food coloring if you prefer natural-looking candy.
