Description

This homemade Cinnamon Rock Candy is a festive and spicy treat that’s perfect for holidays or gifting. With a bold cinnamon flavor and a beautiful red color, it’s as eye-catching as it is delicious.


Ingredients

  • 3 3/4 cups granulated sugar
  • 1 1/4 cups light corn syrup
  • 1 cup water
  • 1 tsp cinnamon oil
  • 1/2 tsp red food coloring (liquid or gel)
  • Powdered sugar, for dusting

Instructions

  1. Line a 15x10x1 inch baking sheet with foil and lightly grease it. Set aside.
  2. In a large heavy saucepan, combine the sugar, corn syrup, and water. Stir over medium heat until sugar dissolves.
  3. Attach a candy thermometer to the pan (make sure it doesn’t touch the bottom). Bring the mixture to a boil without stirring and continue cooking until it reaches 300°F (hard crack stage).
  4. Remove from heat and wait for the bubbling to stop. Carefully stir in the cinnamon oil and red food coloring. Be cautious as the mixture will release strong vapors.
  5. Immediately pour the candy mixture into the prepared pan and allow it to cool completely (about 1 hour).
  6. Once hardened, break the candy into pieces using a butter knife or mallet.
  7. Dust the candy pieces with powdered sugar to prevent sticking. Store in an airtight container.

Notes

  • Use a candy thermometer for accurate temperature measurement.
  • Cinnamon oil is much stronger than extract – do not substitute without adjusting quantity.
  • Be cautious when adding cinnamon oil – the vapors can be intense.
  • You can omit the food coloring if you prefer natural-looking candy.
