These Cinnamon Roll French Toast Roll-Ups are a fun and delicious twist on classic French toast, filled with a creamy cinnamon mixture and cooked until golden brown. Perfect for breakfast or brunch!

Ingredients

  • 8 slices of white bread (crusts removed)
  • 4 oz cream cheese, softened
  • 1 tbsp powdered sugar
  • 1/2 tsp vanilla extract
  • 1 tbsp cinnamon
  • 2 tbsp granulated sugar
  • 2 large eggs
  • 1/4 cup milk
  • Butter for greasing pan
  • Optional: maple syrup or extra powdered sugar for serving

Instructions

  1. In a small bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth.
  2. In a separate bowl, mix cinnamon and sugar together.
  3. Flatten each bread slice with a rolling pin.
  4. Spread a thin layer of the cream cheese mixture on each slice of bread.
  5. Roll each slice tightly into a roll-up.
  6. In another bowl, whisk together eggs and milk.
  7. Dip each roll-up into the egg mixture, coating well.
  8. Heat butter in a nonstick skillet over medium heat.
  9. Cook the roll-ups in the skillet, turning frequently, until all sides are golden brown.
  10. Remove from skillet and immediately roll in the cinnamon sugar mixture.
  11. Serve warm with maple syrup or a dusting of powdered sugar, if desired.

Notes

  • Use soft, fresh bread for easier rolling.
  • You can prep the cream cheese filling ahead of time.
