Ingredients

  • 1/2 cup egg whites

  • 1 scoop (30g) vanilla protein powder
  • 1/2 tsp cinnamon
  • Pinch of salt
  • 1 tbsp light cream cheese
  • 1 tbsp Greek yogurt
  • 1 tbsp powdered sweetener
  • 1 tbsp maple syrup (sugar-free if preferred)
  • 1/2 tsp cinnamon (for filling)

Instructions

  1. In a mixing bowl, whisk together the egg, egg whites, and almond milk.
  2. Add oat flour, protein powder, cinnamon, and a pinch of salt. Whisk until smooth.
  3. Heat a non-stick skillet over medium heat and lightly grease it.
  4. Pour a small amount of batter into the skillet, swirling to form a thin crepe.
  5. Cook for about 1-2 minutes per side, then remove and repeat with remaining batter.
  6. In a small bowl, mix cream cheese, Greek yogurt, and powdered sweetener until smooth to make the filling.
