Description

A creamy and tangy classic bologna salad made with finely diced bologna, mayonnaise, relish, mustard, and fresh vegetables. Perfect as a sandwich spread, dip, or side dish.


Ingredients

  • 1 pound bologna, finely diced
  • 1/2 cup mayonnaise
  • 2 tablespoons sweet pickle relish
  • 1 tablespoon yellow mustard
  • 1/4 cup finely diced onion
  • 1/4 cup finely diced celery
  • Salt and pepper to taste
  • Optional: hard-boiled eggs, sliced, for garnish
  • Optional: chopped fresh parsley, for garnish

Instructions

  1. Finely dice the bologna into small pieces.
  2. In a large mixing bowl, combine the mayonnaise, sweet pickle relish, yellow mustard, diced onion, and diced celery. Mix well.
  3. Add the diced bologna to the dressing mixture.
  4. Gently toss the bologna with the dressing until evenly coated.
  5. Season with salt and pepper to taste.
  6. Cover the bowl and refrigerate for at least 1 hour to allow flavors to meld.
  7. Before serving, garnish with sliced hard-boiled eggs and chopped parsley, if desired.
