Description

Ingredients
- 4 cups all-purpose flour
- 1/4 cup sugar
- 1 tsp salt
- 1 tbsp instant dry yeast
- 1 cup warm milk
- 1/4 cup water
- 4 egg yolks
- 1/4 cup unsalted butter, softened
- 1/2 cup grated cheddar cheese (for topping)
- 1/4 cup softened butter (for topping)
- 1/4 cup sugar (for topping)
Instructions
- In a mixing bowl, combine warm milk, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
- Add egg yolks, water, salt, and 2 cups of flour. Mix until combined.
- Gradually add the remaining flour and knead the dough until smooth and elastic.
- Add softened butter and continue kneading until fully incorporated. The dough should be soft and slightly sticky.
- Place dough in a greased bowl, cover with a damp cloth, and let it rise for 1 to 1.5 hours or until doubled in size.
- Punch down the dough and divide into 12 equal portions. Shape each into a spiral or coil.
- Place shaped dough onto a greased baking pan. Cover and let rise again for 30-45 minutes.
- Preheat oven to 350°F (175°C). Bake for 15-20 minutes or until lightly golden.
- Allow the buns to cool slightly. Brush the top with softened butter, sprinkle sugar, and generously top with grated cheese.

- You can use margarine instead of butter for a more traditional flavor.
- Ensaymada can be stored in an airtight container for up to 3 days or frozen for longer shelf life.
