A hearty yet refreshing Cobb salad featuring chicken, smoked beef, eggs, avocado, and blue cheese, finished with a tangy balsamic dressing.
Ingredients
- 6 oz smoked beef strips, chopped and browned
- 1 medium head romaine lettuce, chopped, rinsed, and dried
- 2 cooked chicken breasts
- 2 hard-boiled eggs
- 1 large avocado, sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, thinly sliced
- 1/2 cup blue cheese, crumbled
- 2 tablespoons parsley or chives, finely chopped (optional)
- 3 tablespoons balsamic vinegar
- 1 tablespoon Dijon mustard
- 1 garlic clove, pressed or finely minced
- 1/3 cup extra-virgin olive oil
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Cook the smoked beef strips in a skillet until browned and slightly crisp, then transfer to a paper towel-lined plate to drain.
- Prepare the hard-boiled eggs, allow them to cool, then peel and quarter.
- Chop, rinse, and thoroughly dry the romaine lettuce, then arrange it on a large serving platter.
- Slice or chop the cooked chicken breasts.
- Arrange the chicken, eggs, avocado, cherry tomatoes, red onion, blue cheese, and smoked beef strips in neat rows over the lettuce.
- Sprinkle parsley or chives over the top if using.
- In a small bowl or jar, whisk together balsamic vinegar, Dijon mustard, garlic, olive oil, salt, and black pepper until well combined.
- Drizzle the dressing over the salad just before serving or serve on the side.
