Description

Coconut Drops are a traditional Caribbean treat made with shredded coconut, brown sugar, and warming spices like ginger and nutmeg. This chewy and slightly crunchy dessert is simple to prepare and full of bold, tropical flavor.


Ingredients

  • 2 cups freshly grated coconut or unsweetened shredded coconut
  • 1 1/2 cups brown sugar
  • 1 tablespoon fresh ginger, grated
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup water

Instructions

  1. In a large saucepan, combine grated coconut, brown sugar, grated ginger, cinnamon, nutmeg, and salt.
  2. Add water and stir to mix thoroughly.
  3. Place the saucepan over medium-high heat and bring the mixture to a boil.
  4. Reduce heat slightly and let it simmer, stirring frequently to prevent sticking or burning.
  5. Continue cooking until the liquid reduces and thickens to a sticky, caramel-like consistency.
  6. Once thickened and glossy, use a spoon to drop small mounds of the mixture onto a parchment-lined tray or greased surface.
  7. Allow the drops to cool and harden completely at room temperature.
  8. Once cooled, peel off and serve.

  • If using sweetened coconut, reduce the amount of sugar to avoid over-sweetening.
  • Store in an airtight container at room temperature for up to one week.
  • Use a non-stick or heavy-bottomed pot to prevent the mixture from burning.
