Ingredients
1 ¾ cups all-purpose flour
½ teaspoon baking soda
¼ teaspoon salt
½ cup unsalted butter, softened
1 cup granulated sugar
1 large egg
1 tablespoon instant coffee granules
1 teaspoon vanilla extract
¼ cup additional sugar (for rolling)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium-sized bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a separate large bowl, cream the softened butter and 1 cup of granulated sugar until light and fluffy.
- Add the egg, vanilla extract, and instant coffee granules. Mix until fully combined.
- Gradually add the dry ingredients to the butter mixture, mixing just until combined. The dough should be slightly sticky.
- Roll the dough into 1-inch balls and roll each ball in the ¼ cup of granulated sugar until coated.
- Place the sugar-coated dough balls on the prepared baking sheet, spacing them about 2 inches apart.
- Flatten each ball slightly with the bottom of a glass or your fingers to ensure even baking.
- Bake for 8-10 minutes, or until the edges are golden and the center is set.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
