Description

This banana bread cobbler combines the comforting flavor of banana bread with the gooey, spoonable texture of a cobbler. With caramelized bananas and a buttery topping, it’s easy to make and perfect for breakfast, brunch, or dessert.

Ingredients

  • 3 ripe bananas, mashed
  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 cup milk
  • 1/2 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add the eggs, milk, vanilla extract, and melted butter to the bananas and stir until well combined.
  4. In a separate bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, salt, and cinnamon.
  5. Gradually fold the dry ingredients into the wet banana mixture until just combined. Do not overmix.
  6. Pour the batter into the prepared baking dish.
  7. Sprinkle chopped nuts evenly over the top if using.
  8. Bake for 40–45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out mostly clean.
  9. Let the cobbler rest for about 10 minutes before serving warm.

Notes

  • Use very ripe bananas with brown spots for the best flavor.
  • Add chocolate chips for a dessert twist.
  • To make it dairy-free, substitute plant-based milk and butter.
  • Use a gluten-free 1:1 flour blend for a gluten-free version.
  • Serve with vanilla ice cream or whipped cream for extra indulgence.
