Description

This Comforting French Onion Pot Roast combines tender, slow-cooked beef chuck roast with rich French onion flavors, caramelized onions, and melty cheese for a cozy, hearty dinner perfect for colder days.


Ingredients

  • 3 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 medium yellow onions, thinly sliced
  • 1 tablespoon brown sugar
  • 2 ½ pounds chuck roast
  • Salt and pepper, to taste
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon onion powder
  • 1 tablespoon all-purpose flour
  • 1 cup beef broth
  • 1 cup French onion soup (store-bought or homemade)
  • 1 ½ cups shredded Gruyère cheese
  • Fresh thyme or parsley, for garnish (optional)

Instructions

  1. Heat olive oil and butter in a large Dutch oven over medium heat. Add sliced onions and brown sugar, and cook until deeply caramelized, about 30 minutes.
  2. Remove onions and set aside. Season the chuck roast with salt and pepper.
  3. In the same pot, sear the chuck roast on all sides until browned, about 3–4 minutes per side. Remove and set aside.
  4. Add Dijon mustard, Worcestershire sauce, minced garlic, dried thyme, onion powder, and flour to the pot. Stir and cook for 1–2 minutes.
  5. Deglaze with beef broth and French onion soup, scraping up browned bits.
  6. Return onions and seared roast to the pot. Cover and cook on low heat for 3–4 hours, or until the beef is tender and easily shreds with a fork.
  7. Preheat oven to broil. Sprinkle shredded Gruyère cheese over the top of the roast and broil for 2–3 minutes, or until melted and bubbly.
  8. Garnish with fresh thyme or parsley if desired and serve warm.

Notes

  • Use a heavy-bottomed Dutch oven for even cooking.
  • Caramelizing the onions slowly builds depth of flavor—don’t rush this step.
  • For extra richness, substitute some of the broth with red wine.
  • This dish pairs well with mashed potatoes or crusty bread.
