Ingredients
- 2 ½ cups all-purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup marshmallow fluff
- ½ cup unsalted butter, softened (for filling)
- 1 cup powdered sugar
- 1 teaspoon vanilla extract (for filling)
- Food coloring (optional)
- Colored icing or edible markers for decoration
Instructions
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large mixing bowl, beat the butter and sugar until light and fluffy. Add the egg and vanilla extract, mixing until combined.
- Gradually add the dry ingredients to the wet mixture and mix until a dough forms.
- Divide the dough into two portions, wrap in plastic wrap, and chill in the refrigerator for at least 1 hour.
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Roll out the chilled dough to about ¼-inch thickness on a floured surface. Use heart-shaped cookie cutters to cut out shapes.
- Transfer the hearts to the prepared baking sheets and bake for 10-12 minutes, or until the edges are lightly golden. Let cool completely.
- In a mixing bowl, beat together marshmallow fluff, softened butter, powdered sugar, and vanilla extract until smooth and fluffy. Add food coloring if desired.
- Spread or pipe the marshmallow filling onto the flat side of half of the cookies, then top with the remaining cookies to make sandwiches.
- Decorate the tops with colored icing or edible markers to write messages like “Be Mine,” “Love You,” or “XOXO.”
