Description

Ingredients

  • 2 ½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup marshmallow fluff
  • ½ cup unsalted butter, softened (for filling)
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract (for filling)
  • Food coloring (optional)
  • Colored icing or edible markers for decoration

Instructions

  1. In a medium bowl, whisk together the flour, baking powder, and salt.
  2. In a large mixing bowl, beat the butter and sugar until light and fluffy. Add the egg and vanilla extract, mixing until combined.
  3. Gradually add the dry ingredients to the wet mixture and mix until a dough forms.
  4. Divide the dough into two portions, wrap in plastic wrap, and chill in the refrigerator for at least 1 hour.
  5. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  6. Roll out the chilled dough to about ¼-inch thickness on a floured surface. Use heart-shaped cookie cutters to cut out shapes.
  7. Transfer the hearts to the prepared baking sheets and bake for 10-12 minutes, or until the edges are lightly golden. Let cool completely.
  8. In a mixing bowl, beat together marshmallow fluff, softened butter, powdered sugar, and vanilla extract until smooth and fluffy. Add food coloring if desired.
  9. Spread or pipe the marshmallow filling onto the flat side of half of the cookies, then top with the remaining cookies to make sandwiches.
  10. Decorate the tops with colored icing or edible markers to write messages like “Be Mine,” “Love You,” or “XOXO.”
