These easy brownie mix cookies are rich, fudgy, and packed with chocolate flavor. Made with a boxed brownie mix, they come together quickly for a soft, chewy treat.
Ingredients
- 1 box brownie mix (18–19 oz)
- 2 large eggs
- 1/4 cup vegetable oil
- 1 tablespoon water
- 1/2 cup chocolate chips (optional)
- 1/4 cup powdered sugar (optional, for rolling)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the brownie mix, eggs, vegetable oil, and water. Stir until fully incorporated and a thick dough forms.
- Fold in chocolate chips if using.
- Scoop tablespoon-sized portions of dough and roll into balls. If desired, roll each ball in powdered sugar.
- Place dough balls on the prepared baking sheet about 2 inches apart.
- Bake for 8–10 minutes, or until the edges are set but the centers remain soft.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Do not overbake; cookies will continue to set as they cool.
- Add chopped nuts or white chocolate chips for variation.
- Store in an airtight container at room temperature for up to 4 days.
- Dough can be chilled for 20 minutes if it feels too sticky to handle.
