Description

This creamy corn chowder is a hearty and comforting soup made with sweet corn, tender potatoes, crispy bacon, and a rich, flavorful broth. It’s perfect for a cozy meal and easy to make with simple ingredients.


Ingredients

  • 6 strips bacon, chopped
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 Tbsp all-purpose flour
  • 4 cups low-sodium chicken broth
  • 1 1/2 lbs Yukon gold potatoes, peeled and diced
  • 1 bay leaf
  • 1 tsp salt, or to taste
  • 1/2 tsp black pepper, or to taste
  • 1/2 tsp smoked paprika
  • 4 cups corn (fresh, frozen, or canned and drained)
  • 1 cup heavy whipping cream
  • 2 Tbsp fresh parsley, chopped (optional, for garnish)

Instructions

  1. In a large pot or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove bacon with a slotted spoon and set aside, leaving about 2 Tbsp of bacon fat in the pot.
  2. Add the chopped onion to the pot and sauté for 5 minutes or until softened. Add the minced garlic and cook for another 30 seconds.
  3. Stir in the flour and cook for 1 minute to remove the raw flour taste.
  4. Gradually whisk in the chicken broth, stirring constantly until smooth.
  5. Add diced potatoes, bay leaf, salt, pepper, and smoked paprika. Bring to a boil, then reduce heat and simmer uncovered for 15-20 minutes or until potatoes are tender.
  6. Add the corn and continue cooking for 5 minutes. Remove bay leaf.
  7. Stir in the heavy cream and half of the cooked bacon. Simmer for 2-3 more minutes until heated through. Adjust seasoning if needed.
  8. Serve hot, garnished with remaining bacon and chopped parsley if desired.

Notes

  • For a thicker soup, mash some of the potatoes or use an immersion blender for a few seconds.
  • You can use fresh, frozen, or canned corn based on availability.
  • Smoked paprika adds a subtle smoky flavor, but you can substitute with regular paprika if preferred.
