Description

Ingredients
- 1 quart oil for frying
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- ¼ teaspoon white sugar
- 1 egg, beaten
- ½ cup milk
- 1 tablespoon shortening, melted
- 1 cup canned corn, drained
Instructions
- Heat oil in a deep fryer or large heavy skillet to 365 degrees F (185 degrees C).
- In a medium bowl, mix together the flour, baking powder, salt, and sugar.
- Stir in the egg, milk, and melted shortening until well blended.
- Mix in the drained corn.
- Drop spoonfuls of the batter into the hot oil and fry until golden brown, about 2 to 4 minutes per side.
- Remove with a slotted spoon and drain on paper towels. Serve hot.
