Description

These classic corn fritters are crispy on the outside and tender on the inside, made with sweet corn and a simple batter. Perfect as a side dish, appetizer, or snack.


Ingredients

  • 1 quart oil for frying
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon white sugar
  • 1 egg, beaten
  • ½ cup milk
  • 1 tablespoon shortening, melted
  • 1 cup canned corn, drained

Instructions

  1. Heat oil in a deep fryer or large heavy skillet to 365 degrees F (185 degrees C).
  2. In a medium bowl, mix together the flour, baking powder, salt, and sugar.
  3. Stir in the egg, milk, and melted shortening until well blended.
  4. Mix in the drained corn.
  5. Drop spoonfuls of the batter into the hot oil and fry until golden brown, about 2 to 4 minutes per side.
  6. Remove with a slotted spoon and drain on paper towels. Serve hot.
