Description

These crispy Corn Ribs are a fun and tasty way to enjoy corn on the cob, sliced into rib-like pieces, seasoned, and roasted or air fried until caramelized and golden.

Ingredients

  • 4 ears of corn
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Lime wedges, to serve
  • Fresh cilantro or parsley, for garnish (optional)

Instructions

  1. Preheat oven to 200°C/390°F (fan forced) or 220°C/430°F (conventional), or preheat air fryer to 200°C/390°F.
  2. Cut the corn into quarters lengthwise to resemble ribs. Use a sharp knife and be cautious as corn is tough to cut.
  3. In a small bowl, mix olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper.
  4. Brush or toss the corn ribs with the seasoned oil mixture to coat evenly.
  5. Place the corn ribs on a baking tray lined with parchment paper or in the air fryer basket in a single layer.
  6. Bake for 25–30 minutes or air fry for 12–15 minutes until the edges curl and the corn is golden and slightly charred.
  7. Serve hot with lime wedges and a sprinkle of fresh herbs if desired.

Notes

  • Be very careful when cutting the corn — use a sharp knife and work slowly.
  • Air frying gives a crispier texture, but oven baking works well too.
  • Feel free to customize the seasoning with your favorite spice blends.
