Description

Rich and fudgy cosmic brownie cookies topped with smooth chocolate ganache and colorful candy-coated chips. A nostalgic bakery-style treat with a soft center and crackly edges.


Ingredients

  • 1 cup (225 g) unsalted butter, softened
  • 1 cup (200 g) granulated sugar
  • 1/2 cup (100 g) light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/4 cups (155 g) all-purpose flour
  • 3/4 cup (75 g) cocoa powder
  • 1 tsp cornstarch
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup (180 g) semi-sweet chocolate chips
  • 1/2 cup (120 ml) heavy cream
  • 3/4 cup (130 g) mini candy-coated chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking trays with parchment paper.
  2. Cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs and vanilla extract, mixing until fully combined.
  4. In a separate bowl, whisk together the flour, cocoa powder, cornstarch, baking soda, and salt.
  5. Gradually mix the dry ingredients into the wet ingredients until a thick dough forms.
  6. Scoop the dough onto the prepared baking trays, spacing evenly apart, and gently flatten each ball.
  7. Bake for 9–11 minutes until the edges are set but the centers remain soft. Allow cookies to cool completely.
  8. Heat the heavy cream until just simmering, then pour over the chocolate chips. Let sit for 2 minutes, then stir until smooth to create the ganache.
  9. Spoon or spread the ganache over each cooled cookie and top with mini candy-coated chocolate chips.
  10. Allow the ganache to set before serving.

Notes

  • Chill the dough for 30 minutes for thicker cookies.
  • Store in an airtight container at room temperature for up to 4 days.
  • You can refrigerate the cookies briefly to help the ganache set faster.
  • For extra fudginess, slightly underbake the cookies.
