Description

A moist, protein-packed banana bread made with cottage cheese and naturally sweetened with honey or maple syrup. Perfect for a healthy breakfast or snack.


Ingredients

  • 1 cup mashed ripe bananas (about 23 bananas)
  • 1 cup cottage cheese
  • 2 large eggs
  • 1/2 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup chopped walnuts or pecans (optional)
  • 1/4 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add the cottage cheese, eggs, honey or maple syrup, and vanilla extract to the mashed bananas. Mix until well combined.
  4. In a separate bowl, whisk together the whole wheat flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
  6. Fold in the chopped nuts and chocolate chips, if using.
  7. Pour the batter into the prepared loaf pan and spread it evenly. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the banana bread to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely. Slice and enjoy!
