Description
A moist, protein-packed banana bread made with cottage cheese and naturally sweetened with honey or maple syrup. Perfect for a healthy breakfast or snack.
Ingredients
- 1 cup mashed ripe bananas (about 2–3 bananas)
- 1 cup cottage cheese
- 2 large eggs
- 1/2 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 2 cups whole wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 cup chopped walnuts or pecans (optional)
- 1/4 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
- In a large bowl, mash the ripe bananas until smooth.
- Add the cottage cheese, eggs, honey or maple syrup, and vanilla extract to the mashed bananas. Mix until well combined.
- In a separate bowl, whisk together the whole wheat flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
- Fold in the chopped nuts and chocolate chips, if using.
- Pour the batter into the prepared loaf pan and spread it evenly. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the banana bread to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely. Slice and enjoy!
