Ingredients
- 1 cup cottage cheese
- 1 cup pumpkin puree
- 2 large eggs
- 1/2 cup brown sugar
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 2 tsp pumpkin pie spice
- 1 tsp cinnamon
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1/4 cup olive oil or melted coconut oil
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- Blend cottage cheese in a blender or food processor until smooth.
- In a large bowl, mix pumpkin puree, blended cottage cheese, eggs, brown sugar, vanilla extract, and oil until combined.
- In another bowl, whisk flour, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt.
- Gradually add dry ingredients to wet mixture, stirring until just combined.
- Pour batter into prepared pan and smooth the top.
- Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan before slicing into 9 bars.
