Description

Cottage Cheese Pumpkin Spice Cake Bars are moist, protein-packed treats with the cozy flavors of fall. These tender, subtly sweet bars combine pumpkin spice with creamy cottage cheese for a healthier alternative to traditional pumpkin desserts. Perfect for breakfast, snacks, or dessert.


Ingredients

  • 1 cup cottage cheese
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1/2 cup brown sugar
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tsp pumpkin pie spice
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/4 cup olive oil or melted coconut oil

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Blend cottage cheese in a blender or food processor until smooth.
  3. In a large bowl, mix pumpkin puree, blended cottage cheese, eggs, brown sugar, vanilla extract, and oil until combined.
  4. In another bowl, whisk flour, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt.
  5. Gradually add dry ingredients to wet mixture, stirring until just combined.
  6. Pour batter into prepared pan and smooth the top.
  7. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow to cool in the pan before slicing into 9 bars.
