Ingredients

  • 3 cups whole wheat flour
  • 22 ½ cups all-purpose flour
  • 2 ½ teaspoons salt
  • 2 ¼ teaspoons active dry yeast (1 packet)
  • 1 ¾ cups warm water (about 100°F)
  • 2 tablespoons honey
  • 2 tablespoons olive oil

Instructions

  1. In a mixing bowl, combine the warm water, honey, and yeast. Let it sit for 5-10 minutes until foamy.
  2. Add the olive oil, whole wheat flour, and salt. Begin mixing.
  3. Gradually add the all-purpose flour, one cup at a time, until the dough comes together and is slightly tacky but not sticky.
  4. Knead the dough by hand or in a mixer for 6-8 minutes until smooth and elastic.
  5. Place the dough in a lightly greased bowl, cover it, and let it rise in a warm spot for about 1 to 1.5 hours or until doubled in size.
  6. Punch down the dough, shape it into a round or oval loaf, and place it on a parchment-lined baking sheet or into a greased loaf pan.
  7. Cover and let the dough rise again for 30-45 minutes until puffy.
  8. Preheat the oven to 375°F (190°C).
  9. Score the top of the loaf with a sharp knife, then bake for 30-35 minutes, or until golden brown and hollow-sounding when tapped.
  10. Allow the bread to cool on a wire rack before slicing.
