Description

This Cowboy Biscuit Casserole is a hearty and comforting dish made with ground beef, vegetables, cheese, and biscuit dough. It’s a simple and satisfying one-pan meal perfect for busy weeknights or family dinners.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (10 oz) Rotel (diced tomatoes with green chilies), drained
  • 1 can (16 oz) refrigerated biscuit dough, each biscuit cut into quarters
  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet over medium heat, brown the ground beef until fully cooked. Drain any excess grease.
  3. Add the taco seasoning and water to the beef. Stir to combine and simmer for a few minutes.
  4. Add the corn, black beans, and Rotel to the skillet. Stir everything together until well combined.
  5. Transfer the mixture to a greased 9×13-inch baking dish.
  6. Top the meat mixture with the biscuit pieces, spreading them evenly over the top.
  7. Sprinkle shredded cheddar cheese generously over the biscuits.
  8. Bake uncovered in the preheated oven for 25-30 minutes, or until the biscuits are golden brown and cooked through.
  9. Remove from oven and let rest for 5 minutes before serving.

Notes

  • Use spicy Rotel for an extra kick.
  • You can substitute ground turkey or chicken for beef.
  • Add diced onions or bell peppers for more veggies.
  • Serve with sour cream or salsa on the side.
