This Cowboy Biscuit Casserole is a hearty and comforting dish made with ground beef, vegetables, cheese, and biscuit dough. It’s a simple and satisfying one-pan meal perfect for busy weeknights or family dinners.
Ingredients
- 1 lb ground beef
- 1 packet taco seasoning
- 1/2 cup water
- 1 can (15 oz) corn, drained
- 1 can (15 oz) black beans, rinsed and drained
- 1 can (10 oz) Rotel (diced tomatoes with green chilies), drained
- 1 can (16 oz) refrigerated biscuit dough, each biscuit cut into quarters
- 2 cups shredded cheddar cheese
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet over medium heat, brown the ground beef until fully cooked. Drain any excess grease.
- Add the taco seasoning and water to the beef. Stir to combine and simmer for a few minutes.
- Add the corn, black beans, and Rotel to the skillet. Stir everything together until well combined.
- Transfer the mixture to a greased 9×13-inch baking dish.
- Top the meat mixture with the biscuit pieces, spreading them evenly over the top.
- Sprinkle shredded cheddar cheese generously over the biscuits.
- Bake uncovered in the preheated oven for 25-30 minutes, or until the biscuits are golden brown and cooked through.
- Remove from oven and let rest for 5 minutes before serving.
Notes
- Use spicy Rotel for an extra kick.
- You can substitute ground turkey or chicken for beef.
- Add diced onions or bell peppers for more veggies.
- Serve with sour cream or salsa on the side.
