Cowboy Casserole is a hearty, family-friendly comfort dish made with seasoned ground beef, sweet corn, creamy soup, melted cheese, and crispy golden tater tots baked to perfection.
Ingredients
- 1 pound ground beef
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 1 (15 ounce) can corn, drained
- 1 (10.5 ounce) can cream of mushroom soup
- 1/2 cup sour cream
- 1/2 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika
- 2 cups shredded cheddar cheese, divided
- 1 (28-32 ounce) bag frozen tater tots
- 1 tablespoon olive oil
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- In a large skillet over medium heat, add olive oil and cook diced onion until softened. Add garlic and cook for 1 minute.
- Add ground beef and cook until browned. Drain excess grease.
- Stir in corn, cream of mushroom soup, sour cream, milk, salt, pepper, and smoked paprika. Mix until well combined.
- Spread the beef mixture evenly into the prepared baking dish.
- Sprinkle 1 cup of shredded cheddar cheese over the mixture.
- Arrange frozen tater tots in an even layer on top.
- Bake uncovered for 35-40 minutes, until tater tots are golden brown and crispy.
- Sprinkle remaining 1 cup of cheese over the top and bake an additional 5 minutes until melted.
- Remove from oven, let rest for 5 minutes, then serve warm.
Notes
- You can substitute ground turkey for a lighter option.
- Add cooked bacon or diced jalapeños for extra flavor.
- For a crispier topping, broil for 2-3 minutes at the end of baking.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
