Description

Cowboy Casserole is a hearty, family-friendly comfort dish made with seasoned ground beef, sweet corn, creamy soup, melted cheese, and crispy golden tater tots baked to perfection.


Ingredients

  • 1 pound ground beef
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 (15 ounce) can corn, drained
  • 1 (10.5 ounce) can cream of mushroom soup
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 2 cups shredded cheddar cheese, divided
  • 1 (28-32 ounce) bag frozen tater tots
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, add olive oil and cook diced onion until softened. Add garlic and cook for 1 minute.
  3. Add ground beef and cook until browned. Drain excess grease.
  4. Stir in corn, cream of mushroom soup, sour cream, milk, salt, pepper, and smoked paprika. Mix until well combined.
  5. Spread the beef mixture evenly into the prepared baking dish.
  6. Sprinkle 1 cup of shredded cheddar cheese over the mixture.
  7. Arrange frozen tater tots in an even layer on top.
  8. Bake uncovered for 35-40 minutes, until tater tots are golden brown and crispy.
  9. Sprinkle remaining 1 cup of cheese over the top and bake an additional 5 minutes until melted.
  10. Remove from oven, let rest for 5 minutes, then serve warm.
