Ingredients
- 6 large eggs
- 3/4 cup granulated sugar
- 2 cups whole milk
- 1 cup heavy cream
- 1/2 to 1 cup bourbon, rum, or brandy (optional)
- 1 teaspoon freshly grated nutmeg, plus more for garnish
- 1 teaspoon pure vanilla extract
- Pinch of salt
Instructions
- In a medium bowl, whisk the eggs until well blended.
- Gradually whisk in the sugar until fully incorporated.
- In a saucepan over medium heat, combine the milk, cream, and salt. Heat until just below a boil.
- Slowly pour the hot milk mixture into the egg mixture, whisking constantly to temper the eggs.
- Return the mixture to the saucepan and cook over low heat, stirring constantly until it thickens slightly and reaches 160°F (71°C).
- Remove from heat and stir in vanilla, nutmeg, and alcohol (if using).
- Let the eggnog cool, then refrigerate until chilled, about 2-3 hours or overnight.
- Serve cold, garnished with extra nutmeg if desired.
Notes
- For a non-alcoholic version, omit the liquor.
- Chill the eggnog thoroughly before serving for best flavor and texture.
- Use pasteurized eggs if concerned about safety.
