Ingredients

  • 6 large eggs
  • 3/4 cup granulated sugar
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1/2 to 1 cup bourbon, rum, or brandy (optional)
  • 1 teaspoon freshly grated nutmeg, plus more for garnish
  • 1 teaspoon pure vanilla extract
  • Pinch of salt

Instructions

  1. In a medium bowl, whisk the eggs until well blended.
  2. Gradually whisk in the sugar until fully incorporated.
  3. In a saucepan over medium heat, combine the milk, cream, and salt. Heat until just below a boil.
  4. Slowly pour the hot milk mixture into the egg mixture, whisking constantly to temper the eggs.
  5. Return the mixture to the saucepan and cook over low heat, stirring constantly until it thickens slightly and reaches 160°F (71°C).
  6. Remove from heat and stir in vanilla, nutmeg, and alcohol (if using).
  7. Let the eggnog cool, then refrigerate until chilled, about 2-3 hours or overnight.
  8. Serve cold, garnished with extra nutmeg if desired.
