Ingredients
4 cups cooked chicken, shredded or cubed
1 (8 oz) package cream cheese, softened
1 cup ranch dressing
1 (1 oz) packet ranch seasoning mix
2 cups shredded cheddar cheese
1 cup cooked bacon, crumbled
1/2 cup green onions, chopped (optional)
2 cups frozen hashbrowns or tater tots (optional)
Salt and pepper, to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the cooked chicken, cream cheese, ranch dressing, ranch seasoning mix, shredded cheddar cheese, and crumbled bacon. Stir until well combined.
- If using hashbrowns or tater tots, fold them into the mixture now.
- Season with salt and pepper to taste.
- Transfer the mixture to a greased 9×13-inch casserole dish and spread it out evenly.
- Bake in the preheated oven for 25–30 minutes, or until the casserole is bubbly and the top is golden brown.
- Once baked, sprinkle chopped green onions on top if desired, and serve hot.
Notes
- To make ahead, assemble the casserole a day before and refrigerate overnight before baking.
- If making a low-carb version, substitute hashbrowns or tater tots with cauliflower rice or zucchini noodles.
- For extra flavor, you can add vegetables like broccoli, spinach, or peas.
- For a spicier kick, add hot sauce, jalapeños, or chili flakes to the casserole mixture.
- This casserole can be made in a slow cooker by cooking on low for 4–5 hours or high for 2–3 hours.
