Description

Ingredients

4 cups of fresh corn (or frozen, thawed)

1 cup mayonnaise

1 tablespoon apple cider vinegar

2 tablespoons sugar

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup diced red bell pepper

1/4 cup diced red onion

1/4 cup fresh chopped cilantro (optional)

1/4 cup crumbled bacon (optional)


Instructions

  1. If using fresh corn, cook it until tender, then slice the kernels off the cob. If using frozen corn, simply thaw it and drain any excess water.
  2. In a large mixing bowl, combine the corn with the diced red bell pepper, red onion, and cilantro (if using).
