Description

Crispy, savory cassava flour crackers with a hint of pizza flavor from oregano and tomato paste. These gluten-free, vegan snacks are perfect for dipping or enjoying on their own.


Ingredients

  • 1¼ cups (180g) cassava flour
  • 1/4 cup (24g) golden flaxseed meal (optional)
  • 1/2 teaspoon fine Himalayan salt
  • 1/2 teaspoon garlic powder (optional)
  • 1/8 teaspoon baking soda
  • 1/4 teaspoon cream of tartar
  • 3 teaspoons dried oregano (optional)
  • 6 tablespoons (78g) olive oil
  • 8 tablespoons (108g) water
  • 1 tablespoon (20g) tomato paste (optional)

Instructions

  1. Preheat the oven to 300°F.
  2. In a large bowl, mix together cassava flour, flaxseed meal, salt, garlic powder, baking soda, cream of tartar, and oregano.
  3. In a separate bowl, whisk together olive oil, water, and tomato paste.
  4. Combine wet and dry ingredients to form a dough, using a spatula first and then your hands until fully mixed.
  5. Roll the dough between two pieces of parchment paper into a thin, even square about 1/8-inch thick. Transfer to a baking sheet and cut into 1-inch squares using a pizza cutter or knife.
  6. Bake for 40 minutes. Remove from the oven, separate the crackers, and bake for an additional 15 minutes to remove excess moisture.
  7. Sprinkle with extra salt and oregano. Cool and store in an airtight container at room temperature or in the refrigerator.
