Description

This Cranberry Pear Pie combines sweet juicy pears with tart cranberries in a warmly spiced filling tucked inside a flaky lattice crust. It is a cozy dessert perfect for holidays and special gatherings.


Ingredients

  • 2 pie dough crusts
  • 4 bosc pears, peeled, cored, and sliced
  • 2 cups cranberries
  • 1 teaspoon orange zest
  • 1 cup brown sugar
  • 3 tablespoons corn starch
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground all spice
  • 1/2 teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • Optional: 1 egg
  • 1/4 cup water for egg wash

Instructions

  1. Preheat the oven to 400ºF.
  2. Place one pie dough crust into a pie plate and set aside.
  3. Peel, core, and slice the pears, then add them to a large mixing bowl.
  4. Add the cranberries, orange zest, brown sugar, corn starch, cinnamon, nutmeg, all spice, kosher salt, and vanilla extract to the bowl. Mix well until evenly combined.
  5. Transfer the fruit mixture into the prepared pie crust, allowing it to mound slightly over the top.
  6. Create a lattice top using the second pie dough crust by cutting it into strips about 1/2 to 1 inch wide. Weave the strips over the pie filling and pinch the edges together with the bottom crust. Trim any excess dough.
  7. Optional: Make an egg wash by whisking the egg with 1/4 cup water. Brush over the lattice crust for a golden finish.
  8. Bake the pie at 400ºF for 10 minutes.
  9. Reduce the oven temperature to 350ºF and continue baking for 50 to 60 minutes until the crust is golden brown and the filling is bubbling.
  10. Allow the pie to cool completely before slicing and serving.

Notes

  • Place a baking sheet under the pie to catch any bubbling juices while baking.
  • Let the pie cool fully for cleaner slices and a properly set filling.
  • Serve with vanilla ice cream or whipped cream for extra indulgence.
  • Bosc pears work best because they hold their shape during baking.
