Description

Cream Cheese Blueberry Bread is a moist and delicious quick bread packed with juicy blueberries and a ribbon of sweet cream cheese in the middle. Perfect for breakfast, brunch, or a sweet snack.


Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1 2/3 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 cup fresh or frozen blueberries
  • 4 oz cream cheese, softened
  • 1/4 cup granulated sugar (for cream cheese filling)
  • 1 egg (for cream cheese filling)
  • 1 tbsp all-purpose flour (for cream cheese filling)

Instructions

  1. Preheat oven to 350°F. Grease a 9×5-inch loaf pan or line with parchment paper.
  2. In a large bowl, cream together butter and 1 cup sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition. Stir in vanilla and sour cream.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add to wet mixture until just combined.
  5. Gently fold in blueberries.
  6. In a small bowl, beat cream cheese, 1/4 cup sugar, 1 egg, and 1 tbsp flour until smooth.
  7. Pour half of the bread batter into the prepared loaf pan. Spoon cream cheese mixture over the batter and spread gently. Top with remaining batter.
  8. Bake for 55–60 minutes or until a toothpick inserted in the center comes out clean. Tent with foil if the top browns too quickly.
  9. Cool in pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • Use frozen blueberries without thawing to prevent them from bleeding into the batter.
  • Store leftovers in an airtight container in the refrigerator for up to 5 days.
  • Let the bread come to room temperature before serving for best texture and flavor.
