Ingredients

- 1/4 cup unsalted butter, softened
- 7 cups powdered sugar
- 1 tsp peppermint extract
- Food coloring (optional)
- Granulated sugar (for rolling)
Instructions
- In a large mixing bowl, beat the softened cream cheese and butter until smooth and creamy.
- Add the peppermint extract and mix until combined.
- Gradually add the powdered sugar, one cup at a time, mixing well after each addition until a thick dough forms.
- If desired, divide the dough and add food coloring to create different colored mints. Mix until color is evenly distributed.
- Shape the dough into small balls (about 1/2 inch) and roll them in granulated sugar.
- Place the mints on a parchment-lined baking sheet. Flatten each ball slightly with a fork or your thumb.
- Let the mints dry at room temperature for at least 4 hours or overnight until firm.

- Store mints in an airtight container in the refrigerator for up to 2 weeks.
- You can freeze the mints for longer storage—place in layers separated by wax paper.
