Ingredients
2 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp salt
1 cup unsalted butter, softened
8 oz cream cheese, softened
1 1/2 cups granulated sugar
1 large egg
2 tsp vanilla extract
Extra sugar for rolling
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, beat together the butter and cream cheese until smooth and creamy, about 2-3 minutes.
- Add the sugar and continue to beat until light and fluffy, about 3 more minutes.
- Beat in the egg and vanilla extract until fully incorporated.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Scoop tablespoon-sized portions of dough and roll them into balls. Roll each ball in sugar, then place them on the prepared baking sheet about 2 inches apart.
- Gently flatten each cookie with the bottom of a glass or your fingers.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
