Description

This creamy and flavorful creamed spinach recipe is a comforting side dish made with sautéed spinach, garlic, onion, and a rich, cheesy cream sauce. It’s quick to prepare and perfect for weeknight dinners or holiday feasts.


Ingredients

  • 1 TBSP butter
  • 1/2 cup chopped onion
  • 23 cloves garlic, minced
  • 5 oz fresh baby spinach (or 10 oz if preferred)
  • 2 oz cream cheese
  • 1/2 cup heavy cream (or milk or half and half)
  • 1/4 cup freshly grated parmesan cheese
  • 1/8 tsp salt, or to taste
  • 1/8 tsp black pepper, or to taste
  • 1/8 tsp ground nutmeg (optional, but recommended)

Instructions

  1. Heat a large skillet over medium heat and melt the butter.
  2. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and cook for another 30 seconds until fragrant.
  4. Add the fresh spinach to the skillet in batches, stirring until wilted. Continue until all spinach is added and wilted.
  5. Lower the heat and stir in the cream cheese until melted and smooth.
  6. Add the heavy cream and parmesan cheese, stirring to combine.
  7. Season with salt, pepper, and nutmeg (if using).
  8. Simmer for a few minutes until the sauce thickens to your desired consistency.
  9. Taste and adjust seasonings as needed, then serve warm.

Notes

  • You can use frozen spinach – thaw and squeeze out excess water before using.
  • For a lighter version, substitute milk or half and half for the heavy cream.
  • Add extra parmesan or shredded cheese for a cheesier variation.
  • This dish can be made ahead and reheated on the stove or microwave.
