Description
This creamy and flavorful creamed spinach recipe is a comforting side dish made with sautéed spinach, garlic, onion, and a rich, cheesy cream sauce. It’s quick to prepare and perfect for weeknight dinners or holiday feasts.
Ingredients
- 1 TBSP butter
- 1/2 cup chopped onion
- 2–3 cloves garlic, minced
- 5 oz fresh baby spinach (or 10 oz if preferred)
- 2 oz cream cheese
- 1/2 cup heavy cream (or milk or half and half)
- 1/4 cup freshly grated parmesan cheese
- 1/8 tsp salt, or to taste
- 1/8 tsp black pepper, or to taste
- 1/8 tsp ground nutmeg (optional, but recommended)
Instructions
- Heat a large skillet over medium heat and melt the butter.
- Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and cook for another 30 seconds until fragrant.
- Add the fresh spinach to the skillet in batches, stirring until wilted. Continue until all spinach is added and wilted.
- Lower the heat and stir in the cream cheese until melted and smooth.
- Add the heavy cream and parmesan cheese, stirring to combine.
- Season with salt, pepper, and nutmeg (if using).
- Simmer for a few minutes until the sauce thickens to your desired consistency.
- Taste and adjust seasonings as needed, then serve warm.
Notes
- You can use frozen spinach – thaw and squeeze out excess water before using.
- For a lighter version, substitute milk or half and half for the heavy cream.
- Add extra parmesan or shredded cheese for a cheesier variation.
- This dish can be made ahead and reheated on the stove or microwave.
