Description

Ingredients

  • 1 lb (450g) boneless skinless chicken breast, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 12 oz (340g) pasta (e.g., rotini, penne, or fettuccine)
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil
  • 1 cup baby spinach (optional)

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet over medium heat, add olive oil. Add chicken pieces, season with salt and pepper, and cook until golden and cooked through. Remove and set aside.
  3. In the same skillet, melt butter and sauté minced garlic until fragrant.
  4. Add chicken broth and bring to a simmer. Let it reduce slightly.
  5. Lower the heat and stir in heavy cream. Let simmer for a few minutes until the sauce thickens slightly.
  6. Stir in Parmesan cheese until melted and smooth.
  7. Add chopped basil and spinach (if using) and stir until wilted.
  8. Return the cooked chicken to the skillet, then add the cooked pasta. Toss to combine and coat with sauce.
  9. Serve warm, garnished with extra basil or cheese if desired.
