Ingredients
- 12 oz smoked sausage (such as andouille or kielbasa), sliced
- 8 oz pasta (penne, rigatoni, or preferred shape)
- 1 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tbsp Cajun seasoning
- 1 cup heavy cream
- 2 cups chicken broth
- 1/2 cup grated Parmesan cheese
- 1/2 cup diced tomatoes (optional)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat. Add sliced sausage and cook until browned. Remove from pan and set aside.
- In the same pan, sauté diced onions until translucent. Add minced garlic and cook for about 1 minute.
- Stir in Cajun seasoning and cook for another 30 seconds to release the spices.
- Pour in chicken broth and heavy cream. Bring to a gentle simmer.
- Add uncooked pasta and stir to combine. Cover and cook for about 10-12 minutes, or until the pasta is al dente, stirring occasionally.
- Once the pasta is cooked, stir in Parmesan cheese and return the sausage to the skillet.
- Let everything simmer together for a few more minutes until thick and creamy.
- Season with salt and pepper to taste. Garnish with chopped parsley before serving.
