Description
This Creamy Chicken and Mushroom One-Pan Casserole is a comforting and flavorful dish made with tender chicken thighs, earthy mushrooms, and a rich, creamy sauce. Perfect for a cozy dinner with minimal cleanup.
Ingredients
- 1 tbsp olive oil
- 8 skin-on, bone-in chicken thighs
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tbsp unsalted butter
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 250g (8.8 oz) chestnut mushrooms, sliced
- 1 tbsp plain (all-purpose) flour
- 120ml (1/2 cup) dry white wine
- 480ml (2 cups) chicken stock
- 120ml (1/2 cup) double (heavy) cream
- 1 tsp dried thyme
- Fresh parsley, chopped (to serve)
Instructions
- Preheat the oven to 180C/350F (fan).
- Heat the olive oil in a large oven-proof pan or casserole dish over medium-high heat.
- Season the chicken thighs with salt and pepper, then place them skin-side down in the pan. Brown for 5-6 minutes, then flip and brown the other side for 2-3 minutes. Remove from the pan and set aside.
- Add the butter to the pan, followed by the chopped onion. Cook for 5 minutes until softened.
- Stir in the garlic and cook for 1 minute, then add the mushrooms and cook for another 5 minutes.
- Sprinkle in the flour and stir well, cooking for 1 minute to eliminate the raw taste.
- Pour in the wine, stir and allow to simmer for 2-3 minutes.
- Add the chicken stock, cream, and thyme. Stir and bring to a gentle simmer.
- Place the browned chicken thighs back into the pan, skin-side up, and spoon a little sauce over each one.
- Transfer the pan to the oven and bake for 30-35 minutes, until the chicken is cooked through and the sauce is thickened.
- Sprinkle with chopped parsley before serving.
Notes
- Use skinless chicken if you prefer a lighter dish, though skin-on adds more flavor.
- Serve with mashed potatoes, rice, or crusty bread to soak up the sauce.
- You can substitute the wine with more chicken stock if preferred.
- This dish can be made ahead and reheated gently on the stovetop.
