Description

Creamy Chicken, Broccoli & Snowflake Pasta is a festive and comforting one-pot dish combining tender chicken, broccoli, and fun snowflake-shaped pasta in a rich cream sauce — ready in about 30 minutes.


Ingredients

  • 1 box snowflake shaped pasta
  • 2 cups broccoli florets (small cut)
  • 2 tablespoons butter
  • 1 lb (about 450 g) chicken breast, diced small
  • 1 tablespoon extra virgin olive oil
  • 2 garlic cloves, minced
  • 1 cup heavy cream
  • ½ cup grated Parmigiano‑Reggiano cheese (divided)
  • Sea salt & black pepper to taste

Instructions

  1. Bring a large pot of water to a boil.
  2. Meanwhile, season the diced chicken with olive oil, salt, and pepper.
  3. In a large skillet over medium heat, cook the chicken until done (about 3‑4 minutes per side). Remove the chicken and set aside.
  4. In the same skillet, melt the butter. Add the minced garlic and cook, stirring constantly until fragrant (about 1 minute).
  5. Whisk in the heavy cream and bring to a simmer, uncovered, until the sauce thickens (about 2‑3 minutes).
  6. Turn off the heat and fold in half of the grated cheese. Then return the cooked chicken to the skillet.
  7. Meanwhile, cook the pasta according to package directions; add the broccoli during the last minute of cooking. Reserve ½ cup of the pasta cooking water, then drain the pasta and broccoli.
  8. Add the drained pasta and broccoli to the skillet with the sauce and chicken. If needed, add some of the reserved pasta water to adjust the sauce thickness.
  9. Serve immediately, topped with the remaining cheese for extra flavour.

Notes

  • Substitute chicken with turkey or shredded cooked chicken for variety.
  • Swap broccoli with peas, spinach, or asparagus.
  • Use half‑and‑half with flour for a lighter sauce option.
  • Pecorino Romano or cheddar can replace Parmigiano‑Reggiano.
  • Add red pepper flakes for a spicy kick.
  • Store leftovers up to 2 days in the fridge.
  • Reheat gently with a splash of milk or cream to revive the sauce.
  • For best texture, consider adding freshly cooked broccoli when reheating.
