Description
This creamy chicken and spinach dish is a comforting one-skillet meal made with seared chicken thighs, fresh spinach, and a rich garlic-Parmesan cream sauce. It’s quick, flavorful, and perfect for a weeknight dinner.
Ingredients
- 1 1/2 pounds boneless, skinless chicken thighs
 - 1 teaspoon kosher salt, divided
 - 1/2 teaspoon freshly ground black pepper, divided
 - 2 tablespoons olive oil, divided
 - 1 small yellow onion, diced
 - 4 cloves garlic, minced
 - 1 tablespoon all-purpose flour
 - 3/4 cup low-sodium chicken broth
 - 1/2 cup heavy cream
 - 1/2 cup grated Parmesan cheese
 - 1 (5-ounce) package baby spinach
 
Instructions
- Season the chicken thighs with 1/2 teaspoon salt and 1/4 teaspoon pepper.
 - Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the chicken and sear until golden-brown and cooked through, about 5–7 minutes per side. Transfer to a plate.
 - Reduce the heat to medium and add the remaining 1 tablespoon olive oil to the skillet. Add the diced onion and sauté until softened, about 3 minutes.
 - Add the minced garlic and cook for 30 seconds until fragrant.
 - Sprinkle the flour over the onions and garlic, and cook for 1 minute, stirring constantly.
 - Gradually whisk in the chicken broth, scraping up any browned bits from the bottom of the pan.
 - Add the heavy cream and bring the mixture to a simmer.
 - Stir in the Parmesan cheese until melted and smooth.
 - Add the spinach and cook until wilted, about 1–2 minutes.
 - Return the chicken to the skillet and spoon the sauce over the top. Simmer for another 2–3 minutes until everything is heated through.

- Use chicken breasts if you prefer, adjusting cook time accordingly.
 - Add crushed red pepper flakes for a spicy kick.
 - Serve over pasta, rice, or mashed potatoes for a hearty meal.
