Description

This creamy garlic chicken is a quick and flavorful one-pan dinner featuring tender chicken breasts in a rich garlic and cream sauce. Perfect for busy weeknights and ready in just 30 minutes.


Ingredients

  • 500g chicken breast, sliced thinly
  • 1 brown onion, diced
  • 6 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup chicken stock
  • 1/2 cup thickened cream
  • 2 tsp Dijon mustard
  • 1 tbsp parsley, finely chopped (optional)

Instructions

  1. Heat the olive oil and butter in a large frying pan over medium-high heat.
  2. Add the chicken to the pan, season with salt and pepper, and cook until golden and just cooked through. Remove from the pan and set aside.
  3. In the same pan, add diced onion and cook until soft.
  4. Add the minced garlic and sauté for another 1-2 minutes until fragrant.
  5. Pour in the chicken stock, scraping up any bits stuck to the pan. Let simmer for 2-3 minutes.
  6. Add the thickened cream and Dijon mustard. Stir and bring to a gentle simmer.
  7. Return the chicken to the pan and simmer in the sauce for 2-3 minutes, until heated through and well coated.
  8. Garnish with chopped parsley if desired and serve immediately.

Notes

  • Use thinly sliced chicken for faster and even cooking.
  • Can be served with mashed potatoes, rice, or pasta.
  • Leftovers can be stored in the fridge for up to 3 days.
  • For a dairy-free version, substitute cream with coconut cream and omit butter.
