This Creamy Italian Sausage Soup is a hearty, comforting dish made with ground Italian sausage, potatoes, spinach, and a rich, creamy broth. It’s a quick and easy one-pot meal perfect for chilly evenings.
Ingredients
- 1 pound ground Italian sausage
 - 1 tablespoon olive oil
 - 1 small yellow onion, diced
 - 3 cloves garlic, minced
 - 4 cups chicken broth
 - 1 cup water
 - 5 medium yellow potatoes, sliced thin
 - 1 teaspoon Italian seasoning
 - 1/2 teaspoon crushed red pepper flakes
 - 1/2 teaspoon salt
 - 1/4 teaspoon black pepper
 - 3 cups baby spinach
 - 1 cup heavy cream
 - 1/2 cup shredded parmesan cheese
 
Instructions
- In a large pot, cook the ground Italian sausage over medium heat until browned. Drain excess grease and set sausage aside.
 - In the same pot, add olive oil and sauté diced onions until translucent, about 3-4 minutes.
 - Add minced garlic and cook for another minute until fragrant.
 - Pour in chicken broth and water, then add sliced potatoes, Italian seasoning, crushed red pepper flakes, salt, and black pepper.
 - Bring to a boil, then reduce heat and simmer for 10-15 minutes or until potatoes are tender.
 - Add the cooked sausage back into the pot along with the spinach. Stir and cook until spinach wilts, about 2-3 minutes.
 - Reduce heat to low, stir in heavy cream and parmesan cheese until fully incorporated.
 - Simmer for an additional 5 minutes, then serve warm.

- Use spicy Italian sausage if you prefer a kick of heat.
 - For a lighter version, substitute half-and-half for heavy cream.
 - Leftovers can be stored in the refrigerator for up to 3 days.
